Chives are all about that vibrant green look, super satisfying crunch, and a light oniony taste that makes them a must-have in tons of recipes. It’s so handy to keep a pot of these easy-to-grow herbs ready for whenever your salads or hot meals need a burst of flavor.
I’ve found that growing chives from seeds is really easy. Start them indoors about 8-10 weeks before the last frost if you plan to move them outside later (like I did), or any time if you’re working on your indoor herb garden.
Make sure to water your new chive plants well and set them in a spot that gets at least six hours of sun each day. You can start snipping once the blades hit 6 inches tall, leaving about two inches from the bottom so they can bounce back quickly.
Consider planting two or three pots so you always have some chives ready to roll. They look great, too—especially if you’re mixing things up with other herbs in a container. I’ve got three small pots of these Chives in my kitchen—two to alternate trimming to use as an ingredient in my cooking, and one that I let bloom, using their edible, round, and purple flowers as garnish.
Keep your chive plants watered but not drenched, and give them a boost with a half-strength liquid fertilizer every 4-6 weeks to keep them happy and growing.
