If you’re thinking of growing Lemon Balm from seed, some advice: You can start planting outside when it’s warm, or start seeds indoors 4-6 weeks before moving them out. If you live somewhere with shorter summers, start seeds indoors about two months before the last frost and give them some light to help them sprout. Germination works best when seeds get a little light, and they usually pop up in 5 to 10 days if the temperature is between 65 and 70°F.

Lemon Balm grows great in full sun but will do okay in some shade too. It plays nice with plants like melons, tomatoes, squash, onions, and other herbs in the garden. When growing indoors or in pots, thin out the seedlings once they get their second set of leaves. After the frost is done for good, plant them about 12 to 18 inches apart in the garden.

When it’s time to harvest, just cut the stems above a pair of leaves with sharp scissors or shears. You can trim the plant down to 6-8 inches above the soil. You can dry the leaves on or off the stems in a well-ventilated area out of direct sunlight—trust us, stripping the leaves off the stems makes it easier. Once they’re dry, store them in an airtight jar.
